Follow Aquinas Catholic College Menai’s Year 11 Hospitality recipe for bruschetta!

INGREDIENTS:

  • ½ red onion
  • 2 tomato
  • 8 basil leaves
  • 1/3 sour dough bread
  • 2 Tab olive oil
  • 2 Tab balsamic vinegar
  • 2 clove garlic
  • Salt and pepper to season
  • Flat leaf parsley to garnish
  • 1-piece feta/goats cheese to garnish

METHOD:

  1. Wash tomato and basil.
  2. Prepare mise en place:
    – brunoise onion
    – concasse tomato
    – macedoine tomato
    – chiffonnade basil leaves
    – crush garlic
    – slice bread lengthways
    – cut bread into even pieces.
  3. Mix olive oil with crushed garlic in a metal bowl and season with salt and pepper as required.
  4. Brush both sides of bread with garlic and oil mix and place on a baking tray.
  5. Cook brushed bread for 15 minutes in preheated moderate oven (180°C).
  6. Place bread on wire rack to cool.
  7. Mix prepared tomato, remaining olive oil, balsamic vinegar, onion and basil in a bowl.
  8. Top the bread with tomato mixture.
  9. Garnish and serve.
